These copycat little bites party cake muffins are a hit! They’re soft, sweet, and colorful just like the real ones! With just a few simple ingredients, you can bake these up in only 10 minutes! How to make homemade little bites taste like the real thing
So… I’ve experimented with this recipe quite a few times and it’s perfect. The White Lily self rising flour works best because although it’s made with soft winter wheat, which makes soft baked goods, it’s not cake flour which I find is too soft for this recipe. The original little bites are super moist, but also a bit dense in texture and this flour works best. Also, no cake is complete without a flavoring liquid. Even if I bake a strawberry cake using fresh strawberries for example, I will still add strawberry flavoring to ensure my cake doesn’t lose that flavor. This recipe is no different. I use cake batter flavoring and vanilla pudding mix instead of relying on vanilla extract alone to give me that fun pop of flavor I find in a bag of little bites party cake muffins!

Substitutions
Luckily for this recipe, a few substitutions are allowed! The white lily self rising flour can be substituted for all purpose flour plus one and a half teaspoons baking powder and 1/2 teaspoon fine salt. This is because the self rising flour contains baking powder and it’s already salted. The cake batter flavoring can also be substituted for cream cheese flavoring, or a combination of butter and vanilla flavoring. And lastly, you can use white chocolate or cheesecake pudding mix if you don’t have vanilla like I did in the picture above.

Honestly, these babies are perfectly fine being placed in a ziplock bag then into the freezer! Another tip: when they thaw, they’re even softer!

Ingredients
1 cup White Lily self rising flour
1/2 cup granulated sugar
2 tablespoons vanilla pudding mix
1 egg
1/2 cup whole milk
1/2 stick (4 tablespoons) salted butter, melted
2 tablespoons vegetable oil
1 teaspoon cake batter flavoring
1/4 cup colorful sprinkles, plus more for sprinkling
Directions
- Preheat oven to 325 degrees fahrenheit.
- In a large bowl combine flour, sugar, and vanilla pudding mix. If using all purpose flour, you would also add the baking powder and salt in this step.
- Next, in a small bowl add the egg and milk then whisk together. Once combined, mix in the melted butter, oil, and cake batter flavoring.
- Pour the wet mixture into the flour mixture and whisk until smooth, about 60 seconds.
- Spray your mini cupcake tin with nonstick cooking spray.
- Gently fold the colorful sprinkles into the batter.
- Lastly, scoop one tablespoon of batter into each mold. (They should be filled halfway.) Sprinkle the tops of the little bites batter with more colorful sprinkles before popping them into the oven for 10 minutes.
