First of all, they’re insanely delicious! The best way to describe them would be like eating a light and airy funnel cake stuffed with warm, juicy strawberries, and melted chocolate! Can you see my vision? The strawberry itself doesn’t get soggy but instead turns warm and becomes juicier. The chocolate in between the strawberry and the funnel cake-like dough melts in your mouth with every bite. I’ve seen people make these with pancake batter and while I’m sure they’re delicious, they don’t compare to these! The batter for this recipe takes on a funnel cake texture and it’s crispy on the outside yet fluffy on the inside, making each bite PERFECTION!

How I came up with this recipe
It was the day after Valentine’s Day, and I had leftover chocolate covered strawberries. I don’t know about you, but I only enjoy chocolate dipped strawberries when they’re freshly made. After a day has passed, I’ll pass 😂! Afterwhile, strawberries tend to leak juices through the chocolate shell- which I don’t enjoy. So I thought, “what can I do with these? they’re too pretty to throw away!” Then I got this crazy idea to deep fry them! I didn’t want to use pancake batter because I had a specific crispy texture in mind for how I wanted the dough to be. I whipped up a batter similar to funnel cake, dipped the strawberries, and then fried them! Needless to say it was love at first bite! I couldn’t believe just how yummy they were.

My tips for success
- Use cold chocolate dipped strawberries that have been refrigerated at least two hours. The strawberry itself should be cold in the middle. This ensures that the strawberries don’t turn soggy when you fry them.
- Use fresh cooking oil. If you fry the strawberries in used oil, especially if it was used to fry something savory like chicken, it will taste like it!

Ingredients
12 store bought chocolate covered strawberries, cold
1 cup all purpose flour
2 tablespoons granulated sugar
1/2 teaspoon fine sea salt
1 teaspoon baking powder
1 egg
1/2 cup milk
2 teaspoons vanilla extract
2 cups vegetable oil, for frying
1/2 cup powdered sugar, for dusting
Directions
- Slice the tops off the strawberries. Set aside.
- Next, add the oil to a small saucepan over medium heat.
- In a medium sized bowl add flour, sugar, salt, and baking powder. Gently stir to combine.
- To the flour mixture, add in the egg, milk, and vanilla extract. Whisk until the batter is smooth and free of lumps.
- Dip the strawberries in the batter, evenly coating all the sides. Slowly drop the strawberry in the hot oil and fry for 2-3 minutes or until golden brown. Cook one at a time.
- Finally, dust strawberries with powdered sugar and enjoy!
