
How I came up with this recipe
First off let me say, this cake is the definition of “saved the day!” I created it a few Thanksgivings ago to bring to a family gathering because I was short on time. I was just 3 months postpartum and (obviously) couldn’t find the time to make anything from scratch. I grabbed a box, or two, of yellow cake mix along with a few ingredients in my fridge to make a small amount of cheesecake batter. Needless to say, I stumbled upon something easy, quick, and DELISH! I decided to make it into a fun Valentine’s Day recipe.
Can I swap yellow cake mix for another flavor?
ABSOLUTELY! This recipe has become a staple in the kitchens of many of my foodie friends and they have remixed it so many different ways! Red velvet cake, strawberry cake, pumpkin cake, you name it! That’s what I LOVE about this recipe is how easy it is to make it YOUR OWN!
Olivia, what are your tricks to making a box cake taste homemade?
Chile, I’ve heard of so many different hacks to making a box cake taste homemade, and they may work for some people but…. my hack is this: I only add the ingredients listed on the cake box! It’s more so about the technique than ingredients, if you ask me. I grab a large mixing bowl then add the eggs, water, and oil. I mix those together then dump in the dry cake mix. I whisk for about 2 minutes (just as instructed on most cake boxes) and done! The cake becomes even softer if you bake it at a lower temperature, I use 325 degrees until a toothpick comes out clean.

Easy Valentine’s Day Cakes (with video!)

- For the cake
1 box yellow cake mix (I like Betty Crocker)
3 eggs
1 cup water
1/2 cup oil
non stick cooking spray
12 mini cake tins (6.8 ounce)
- Cheesecake swirl
8 ounces cream cheese, softened
3/4 cup granulated sugar
2 tbsp sour cream
1 egg
1 teaspoon vanilla extract
1 tablespoon lemon juice
- Toppings
Two 8oz tubs Cool whip
1 can Strawberry pie filling
Valentine’s Day Sprinkles
Directions
- Mix cake mix according to package directions.
- Mix cream cheese and sugar together until the mixture turns white and smooth.
- Add sour cream, 1 egg, vanilla extract, and lemon juice. Mix to combine.
- Spray mini baking tins with non stick cooking spray and fill a little less than half way with cake batter.
- Dollop 2 tablespoons of cheesecake on top of the cake batter and swirl.
- Bake at 325 degrees for 15 min.
- Allow to cool to room temperature before decorating. Pipe cool whip around the cake.
- Add strawberry filling inside the piped border of cool whip, then top with sprinkles! Refrigerate at least 2 hours before serving.
